master bedroom update....

We began this update pretty much right after Christmas because my hunny got me the new bedding which inspired the whole transformation. The room is still not complete. We need to finish putting up the crown moulding and decorate but everything else is pretty much done! I hope you all enjoy the drastic difference!!!

And here is the entire room! Ahhhh so much better!! (This picture doesn't have the euro pillows, so normally the bed looks more plush and bigger! The euro pictures are in the first picture with Rowyn on the bed.)

Cinnamon roasted almonds

I found this easy yet yummy looking recipe here. How awesome to be able to make these delicious roasted almonds yourself, instead of paying outrageous amounts of money at the fair.

Cinnamon Roasted Almonds

1 egg white
1 tsp. vanilla
3 cups whole almonds
1/2 cup sugar
1/2 cup brown sugar
1 1/2 tsp. cinnamon
1/4 tsp. salt

Preheat oven to 250 degrees. Lightly beat egg white, add vanilla and beat until soft peaks form. Add nuts and stir until well coated. In a gallon size zip-lock bag shake together (you may want to seal the bag first :o) the sugar, brown sugar, cinnamon and salt until well mixed. Add almonds and seal bag again and shake up until the almonds are all coated. Spread almonds evenly onto a lightly greased cookie sheet (I cover my pan in tin foil first and then grease it so there is no clean up!) . Bake for one hour stirring every fifteen minutes or so.

Laundry sign

This is an awesome idea, sending burlap through the printer....and out comes a beautiful new addition to your home! I found the how-to at domestically speaking.

{1st Step}

I created my “laundry” verbiage in Photoshop elements, but you could use any word processing program. I made it 8 1/2” x 11”, so that it would run through my printer as a standard piece of paper. I went to an online dictionary to find the definition I used.

{2nd Step}

Iron the burlap.

I had a piece of scrap burlap that worked perfectly for this project. You want your fabric nice and smooth for the printing.

{3rd Step}

Place your freezer paper on top of your ironed burlap with the shiny side down (touching the burlap). Run a medium, dry iron on top of the freezer paper and it will magically adhere to your burlap.

{4th Step}

Cut your burlap/freezer paper into your 8 1/2” x 11” size.

{5th Step}

Run your burlap/freezer paper through your printer.

{6th Step}

Peel off the freezer paper….

and you have this amazing printed burlap!

To finish off this project, I used the leftovers of the foam board from my Check My Pockets laundry sign to create the backing for my empty black frame.

To adhere the burlap sign I used decorative nails.

I used scraps of burlap, remnants of a sweater I turned into a pillow and the remains of my daughter’s dress turned pillow… and twisted and hot glued them onto felt to create some cute flowers. I glued the flowers onto the foam board and frame with my trusty hot glue gun.

Candy corn cookies

I found these gorg looking cookies at the crafty penguin. I am looking forward to making some this year!!

Pumpkin Spice Sugar Cookies

Ingredients:
3 cups all-purpose flour
1 cup sugar
1-1/2 tsp pumpkin pie spice (a mix of cinnamon, ginger, nutmeg, and allspice)
1 cup butter (salted)
1 egg
1-1/2 tsp vanilla

Prep. Line 2 cookie sheets with parchment paper.

Step 1. In mixer bowl, cream butter and sugar until light and fluffy. Mix in egg and vanilla.

Step 2. In a separate bowl, combine flour and pumpkin pie spice with a fork. Slowly add the flour mixture to the butter mixture, while mixing.

Step 3. Roll dough 1/4-inch thick, refrigerate for 20 minutes, then cut shapes. Transfer shapes to cookies sheets and bake for 10-15 minutes at 350 degrees F. Cookies are done when edges begin to turn golden brown. Transfer cookies to racks to cool.

Note: I had a hard time finding candy corn cookie cutters, so I used light weight circle-shaped cookie cutters and bent them into candy corn shapes.

Glace Icing. For recipe and instructions on how to make glace icing, see this post.

I used Spectrum Orange, Spectrum Lemon Yellow and Spectrum Bright White to dye the icing for this cookie set. All of the piping was done with a Wilton #2 tip.

To prevent the colors from running together, I decorated in three sections, allowing one section to dry before moving on to the next.

Orange Section. First I spread a light orange glace flood with the back of a spoon, forming the middle section of the candy corn. After letting this dry, I over-piped plaid and swirls with dark orange.

White section. This section was decorated with a white flood and sugar pearls. Wait until the flood is tacky before applying sugar pearls.

Yellow Section. Like the orange section, this was made by spreading a flood (light yellow), then over-piping (dark yellow.) This time I piped zig-zags.

Once the cookies have dried overnight, they can be stacked.

Sky jello

What you will need

* 2 packages of Berry Blue Jello
* 2 cups of whipping cream
* 1/4 cup sugar
* 2 cups of ice
* parfait glasses or any clear containers that you can see through

Start by placing your whipping cream in a large bowl, beat on high speed until just starting to thicken. As you continue to whip the cream slowly pour in your sugar, continue whipping cream until it forms super stiff peaks. You want to make sure that it is good and stiff so that if will hold it’s shape later in the jello. Keep chilled in fridge until needed.

Now it’s time to get your jello ready. Pour 2 cups of boiling water into a large bowl and add both boxes of berry blue jello powder. Stir until all of the sugar has dissolved. Now you are going to add your 2 cups of ice, this is going to set up your jello nice and quick :) Stir the ice around in the bowl for about 5 minutes until the jello has thickened and remove any left over ice that didn’t melt. Your jello won’t be super thick like after it has set in the fridge but it will be jelled enough to scoop out on a spoon in a blobby form.

Now the fun begins! Start by placing a few spoonfuls of jello in the bottom of your parfait glass, then take your whipped cream from the fridge and drop in a spoonful or two and press it against the side of the glass. This is going to form your cloud in the sky. Try not to smear any of the whipped cream where you don’t want a cloud, it will show up as streaks when you put more jello in so wipe away any unwanted marks.

Continue layering the jello and whip cream alternating where you place your cream clouds so that you get a nice staggered effect :)

Voila! You’ve created a little chunk of sky in a glass and guess what…. it tastes fabulous!!

Caramel Apples with coconut & chocolate drizzle

I love Caramel apples! They are like a fall staple, if you know what I mean! I made these Caramel apples last year but I think this year I may make one change and add coconut. YUM!

What You Need
5 Apples (1-1/2 lb.), washed, well dried
1 pkg. (14 oz.) KRAFT Caramels
2 Tbsp. Water
1-1/2 cups BAKER'S ANGEL FLAKE Coconut, toasted
2 squares BAKER'S Semi-Sweet Chocolate
Make It

INSERT wooden pop sticks into stem ends of apples. Microwave caramels and water in deep microwaveable bowl on HIGH 2 to 3 min. or until caramels are melted, stirring every minute.

DIP apples in caramel, turning to evenly coat; scrape excess from bottoms of apples. Roll apples in coconut; place on greased tray. Refrigerate 15 min.

MICROWAVE chocolate in separate deep microwaveable bowl on HIGH 1 min. to 1 min. 15 sec. or until chocolate is almost melted, stirring after 1 min.; stir until completely melted. Drizzle chocolate over apples; return to tray. Let stand until chocolate is firm. Keep refrigerated.

Cheesy Jack-o-lantern

I love cheese balls but I think the creativity alone to make a pumpkin makes me love it ten times more! This is a must try this Halloween season! YUM!

What You Need
3 Green onions, divided
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 pkg. (8 oz.) KRAFT Shredded Cheddar Cheese, divided
1/4 cup finely chopped red peppers
2 slices Pepperoni
Make It

CUT 4-inch length from green end of 1 onion; slice remaining onions. Beat cream cheese and 1-1/4 cups Cheddar with mixer until well blended. Stir in sliced onions and peppers. Refrigerate 1 hour.

SHAPE into ball; roll in remaining Cheddar. Cut pepperoni into shapes for the jack-o'-lantern's eyes, nose and mouth; press into cheese ball to make face. Insert green onion piece into top for stem.

SERVE with RITZ Crackers.

Boo-tiful Jello cups

This would add so much to a Halloween dinner party! Kids will love it, especially with its individual serving! So fun! I'm going to try it this Halloween season!

What You Need
3/4 cup boiling water
1 pkg. (3 oz.) JELL-O Orange Flavor Gelatin
2 cups Ice cubes
2/3 cup thawed COOL WHIP Whipped Topping, divided
8 Miniature semi-sweet chocolate chips
Make It

ADD boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Add ice; stir 3 to 5 min. or until gelatin is thickened. Remove any unmelted ice. Whisk in 1/3 cup COOL WHIP until well blended. Pour into 4 dessert dishes.

REFRIGERATE 30 min. or until firm.

DROP remaining COOL WHIP by spoonfuls onto desserts to resemble ghosts. Add chocolate chips for the eyes.

Caramel Crunch bars

What You Need
4-1/2 HONEY MAID Honey Grahams
1 pkg. (11 oz.) KRAFT Caramel Bits
2 Tbsp. Milk
1/2 cup PLANTERS COCKTAIL Peanuts
1/2 cup JET-PUFFED Miniature Marshmallows
1/2 cup coarsely crushed pretzels
4 squares BAKER'S Semi-Sweet Chocolate, melted
Make It

LINE 8-inch square pan with foil, with ends of foil extending over sides of pan. Grease foil generously with shortening. Place grahams on bottom of pan, cutting to fit if necessary.

MICROWAVE caramel bits and milk in microwaveable bowl on HIGH 2 min. or until caramel bits are completely melted and mixture is well blended, stirring every 30 sec. Pour over grahams; top with peanuts, marshmallows and crushed pretzels. Drizzle with chocolate.

REFRIGERATE at least 1 hour. Use foil handles to remove dessert from pan before cutting into bars to serve.

Talk about yum!! And perfect for the approaching fall weather! Here is the recipe! I found it here...

Crust:

* 1 1/2 cups graham cracker crumbs (made from 9 whole crackers finely ground in processor; 1 packet)
* 3 tablespoons sugar
* 6 tablespoons (3/4 stick) unsalted butter, melted

Filling:

* 9 ounces high-quality milk chocolate (such as Lindt or Ghirardelli), chopped
* 2 8-ounce packages cream cheese, room temperature
* 3/4 cup sugar
* 1/8 teaspoon salt
* 3/4 cup heavy whipping cream
* 3 large eggs

Topping:

* 1 cup sugar
* 2 large egg whites
* 3 tablespoons water
* 1 teaspoon cream of tartar
* 1/8 teaspoon salt
* 12 large marshmallows, cut into quarters with wet kitchen scissors
* 1/2 teaspoon vanilla extract
* 1 1-pint container fresh raspberries
* 1 1-pint container fresh blueberries

Preparation

For crust:
Position rack in center of oven and preheat to 350°F. Mix crumbs and sugar in medium bowl. Add melted butter; stir until mixture is evenly moistened. Press onto bottom of 9-inch-diameter springform pan with 2 3/4-inch-high sides. Bake until set, about 12 minutes. Remove from oven; cool. Reduce oven temperature to 325°F.

For filling:
Stir chocolate in top of double boiler set over barely simmering water until smooth. Remove from over water and cool to lukewarm, stirring occasionally.

Combine cream cheese, sugar, and salt in processor and blend until smooth. With motor running, add whipping cream through feed tube and process just until blended. With motor running, add melted chocolate, then add eggs 1 at a time, blending and scraping down sides after each addition until mixture is smooth. Pour batter over crust in pan.

Bake cake until outer edge is slightly puffed and cake is barely set in center (center will look shiny and move slightly when pan is gently shaken), about 55 minutes. Transfer cake to rack. Run small sharp knife around cake to loosen. Chill uncovered until cold, 8 hours or overnight. DO AHEAD: Can be made 2 days ahead. Cover and keep refrigerated.

For topping:
Whisk sugar, egg whites, 3 tablespoons water, cream of tartar, and 1/8 teaspoon salt to blend in large metal bowl. Set bowl over saucepan of simmering water; whisk constantly until sugar dissolves and mixture thickens and is hot to touch, about 3 minutes. Remove bowl from over water and stir in marshmallows (keep water simmering in saucepan). Let stand until marshmallows soften, about 3 minutes. Set bowl with mixture over simmering water; using hand held electric mixer, beat until stiff shiny peaks form, about 4 minutes. Beat in vanilla.

Scrape topping onto cheesecake. Using offset metal spatula, spread topping to edges of cake, swirling decoratively. Let stand until set, about 15 minutes.

Using kitchen torch, lightly brown topping in spots. (Or preheat broiler; place cake at least 4 inches from heat source and broil just until topping is lightly browned in spots, watching closely to avoid burning, about 2 minutes.) Chill cake until cold. DO AHEAD: Can be made 1 day ahead. Cover with cake dome and keep chilled. Remove pan sides. Place cake on platter.

Mix raspberries and blueberries in medium bowl. Cut cake into wedges. Serve berry mixture alongside.

I have a very ugly armchair in my dining room that I have been dying to reupholster for 3 years now. I still have not started the process because I am so nervous to try it! I found directions here...that I think I will follow. I'll let you know how it goes!

Learn to Do It Yourself: How to Reupholster Furniture

If your furniture is looking like it has seen better days, you may be thinking about giving it the boot in favor of some newer pieces. But before you kick that old chair or couch to the curb, consider renewing that old furniture with some brand new upholstery. Like sanding and refinishing, reupholstering an old chair, couch, or cushion can really give new life to some of your older pieces. And, it can give you a chance to express some of your own creativity, in a hands-on fashion! Here are some of the essential tips that you will need to reupholster your own pieces of furniture.

Why Reupholster?
Reupholstering can be a great alternative to buying new furniture for your dining room, living room, or bedroom. You can reupholster almost any type of furniture that has been covered in fabric, and, if you are up to the challenge, you can save a lot of money by doing it yourself. Many people decide to take up the challenge of reupholstering because it:

* saves time spent on ordering custom furniture
* allows you to choose the exact type of fabric and cushioning you want in your piece
* allows you to salvage antique furniture or furniture that has sentimental value

Choosing a Fabric
Before you can take on the task of reupholstering, you will first need to decide on the type of fabric you want your chair, cushion, or sofa to have. It is important that you choose upholstery-quality fabric, and not regular fabric. Upholstery fabric is much more durable and will stand up to the test of time, unlike regular fabric. Most upholstery fabrics are stain-resistant too, which means that you don’t have to worry too much if you spill that cup of coffee!

Be sure to choose a fabric that you like and that will match the other furniture in the room. However, the thicker and stiffer the fabric is that you select, the more difficult the reupholstery process will be. It is typically not recommended that amateur upholsters try to reupholster leather or suede furniture. There are a variety of upholstery stores that are open to the public, which can provide you with a great selection of fabrics at very low prices.

Necessary Tools
In order to begin your reupholstery project, you will need to collect a few reupholstery supplies. It is important that you have:

* a pair of needle nose pliers
* a staple gun (with staples) or upholstery tacks
* a rubber mallet
* a pair of sharp scissors
* welting (cloth used to trim along the edges of furniture)
* glue gun
* cotton batting (to make the furniture soft to sit on)

Depending upon the piece of furniture that you are reupholstering, you may also want to find a friend to help you out. It can sometimes be tricky to tackle reupholstering on your own.

Reupholstering a Chair Cushion

Reupholstering a chair cushion is a relatively easy job and is perfect for beginners. Practice on your cushions before you head straight to that loveseat or sofa bed!

* Unscrew the seat cushion from the chair frame.
* Remove all of the staples or tacks in the fabric using the needle nose pliers.
* Remove the fabric. If it looks worn out, remove the old batting from the cushion too.
* Most chair cushions are made out of a single piece of wood. Take this piece of wood and lay it on top of your new fabric. Cut around the piece of wood with your scissors, leaving at least two or three inches extra overhang on each side.
* Replace the stuffing with new batting. Lay the seat board on top of the batting, and pull the sides of the batting tight over what will be the bottom of the seat. Staple the batting down with your staple gun. Trim off excess batting.
* Lay the piece of wood, batting-side down, over your fabric. Pull the sides of the fabric and stretch it over what will be the bottom of the seat. Staple the fabric down on all four sides. Be careful to make the corner edges neat.
* Trim the excess fabric et voila – a new seat!.

Reupholstering an Armchair

Reupholstering an armchair is a little more challenging. Depending upon its size and decorative features (as found in wing chairs or scrollback chairs) you may require extra fabric and a little more patience.

Preparing the Fabric

* Remove all staples or upholstery tacks with your needle nose pliers.
* Remove all fabric and batting. Try to remove the fabric without ripping it, because you will use these pieces as templates from which to cut your new fabric.
* Lay out the old pieces of fabric on top of your new fabric. Cut around each template, leaving at least two or three inches overhang on all sides.
* Place new batting over the bare pieces on the chair, particularly the seat, back, and arms. Staple or tack down with your mallet.

Upholstering the Chair Back

* Lay your fabric over the back of the chair. Tuck the fabric into the sides of the chair, and pull through to the back.
* Holding the top of the fabric taut, staple the fabric to the back of the wood frame.
* Pull the bottom of the fabric up along the back of the chair and staple to the upper bar on the wood frame.
* Pull the sides of the fabric taut along the back of the chair. Staple to the sides of the wood frame.

Upholstering the Seat

* Drape your fabric over the seat of the chair.
* Pull extra fabric through the frame and underneath the seat.
* Pull the front of the fabric taut beneath the seat frame, and staple.
* Pull the back of the fabric taut beneath the seat frame and staple
* Pull the sides of the fabric taut beneath the seat frame. Pleat and staple down.

Upholstering the Arms

* Lay your fabric over the chair’s arms.
* Fold one-third of the fabric (the part closest to the chair back) forwards.
* Pull the fabric taut on either side of the arm, and staple to the chair frame.
* Locate the center of the folded part of the fabric. Cut a slit along the center of the fold, right to the end of the fold. This will allow you to wrap the end of the fabric around the arms.

Finishing the Arm Chair

* Attach welting on along the seams, as desired.

Cream cheese wontons

These wontons are delicious!! I used a picture from the internet because mine were not as pretty, but they were REALLY REALLY GOOD. I will definitely make them from now on instead of spending $4 for 8 wontons at SaM Pam restaurant! I found this recipe on cooks.com here. Try it! You won't be disappointed!

CREAM CHEESE WONTONS

6 oz. cream cheese
4 green onions, chopped
1/2 tsp. soy sauce
1/4 tsp. garlic powder
1/3 cup real or imitation crab meat
1 package small wonton wrappers

Blend together ingredients. Drop 1 teaspoonful onto each of the wrappers.

Fold in corners and seal with egg white.

Fry in 365°F oil until crispy and brown.

Serve with Sweet and Sour or Duck sauce.

Makes approximately 2 dozen.

Isn't this the cutest idea! I have to admit, I love smores but I always had such a hard time eating those monstrosities! This would be such a great way to have a smore but bite size! I love it! I found this at whimsical creations by Melanie.

Here are her directions:

Ingredients...
marshmallows
melting chocolate
graham crackers
sprinkles
lollipop sticks

Crush the graham crackers and add sprinkles.
Put a lollipop stick in each marshmallow.
Then dip them in chocolate and in graham crackers.
I put them on a cookie sheet and then place them in the fridge for the chocolate to set up.
I also made ones with just sprinkles....

Pina Colada Birthday Cake

Remember this post? I mentioned that I wanted to make my daughter a pina colada cake. Well I did it. I have to say that I am pretty proud of myself. It looks cute enough! Instead of cream of coconut I used coconut milk which made it really runny. I would really do as the recipe directs. I just couldn't find an cream of coconut anywhere! It was DIVINE! Definitely try it!!!

Doesn't this cake just sound absolutely wonderful?!?! I plan on making it for my birthday this weekend...(sigh). Why am I making my own birthday cake you ask? My hubby is not the baking type...and he knows I'm a visionary woman, if the cake doesn't look like I envisioned it then I'm disappointed. Anyways, I will be making my cake and enjoying it with good company. I found the recipe here. I'll let you know how it goes!!

Lemon cake with Lemon Filling and Lemon Butter frosting :)

Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/2 cup butter
1 1/4 cups white sugar
3 eggs
1 teaspoon vanilla extract
1 cup milk

1 tablespoon grated lemon zest
1/2 cup fresh lemon juice
1 tablespoon cornstarch
6 tablespoons butter
3/4 cup white sugar
4 egg yolks, beaten

4 cups confectioners' sugar
1/2 cup butter, softened
2 tablespoons fresh lemon juice
1 teaspoon grated lemon zest
2 tablespoons milk

Directions
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 inch round pans. Mix together the flour, baking powder and salt. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy, about 5 minutes. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated.
Pour batter into prepared pans. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool in pans on wire racks for 10 minutes. Then invert onto wire racks to cool completely.
To make filling: In medium saucepan, mix together 1 tablespoon lemon zest, 1/2 cup lemon juice and 1 tablespoon cornstarch until smooth. Mix in 6 tablespoons butter and 3/4 cup sugar, and bring mixture to boil over medium heat. Boil for one minute, stirring constantly. In small bowl, with a wire whisk, beat egg yolks until smooth. Whisk in a small amount of the hot lemon mixture. Pour the egg mixture into the sauce pan, beating the hot lemon mixture rapidly. Reduce heat to low; cook, stirring constantly, 5 minutes, or until thick (not to boil).
Pour mixture into medium bowl. Press plastic wrap onto surface to keep skin from forming as it cools. Cool to room temperature. Refrigerate 3 hours.
To make frosting: In large bowl, beat confectioners' sugar, 1/2 cup butter, 2 tablespoons lemon juice and 1 teaspoon lemon zest until smooth. Beat in milk, and increase speed and continue to beat until light and fluffy.
To assemble: With long serrated knife, split each cake layer in half horizontally, making 4 layers. Place 1 layer, cut side up, on a serving plate. Spread with half of the lemon filling. Top with another layer, and spread with 1/2 cup frosting. Add third layer, and spread with remaining half of the lemon filling. Press on final cake layer, and frost top and sides of cake with remaining frosting. Refrigerate cake until serving time.

I tried this recipe last night from here and it was delicious!!

Just Like Dominos Pizza Dough Recipe

Ingredients -

5 cups all purpose or bread flour
1 tablespoon sugar
2 teaspoons salt
1 teaspoon instant yeast
2 tablespoons extra virgin olive oil
1 ¾ cups warm water

Preparation:

In a large mixing bowl, combine all ingredients, stirring vigorously. Set aside to rest five minutes, and then stir again for three to five minutes.

Add additional water or flour to achieve a smooth, sticky dough.

Divide into four pieces and place each one into an oiled freezer bag.

At this point, dough can be refrigerated or frozen.

Allow to rise at room temperature and then punch down.

Stretch each piece onto a ten inch pizza pan and allow to rest a few minutes.

Top as usual, and then bake at 450 degrees F until crust is crisp and cheese has melted.

(Makes 4 ten inch pizzas)

marshmallow fondant

16 oz. mini marshmallows
2 TBSP water
2 lbs powdered sugar

First, sprinkle the water over the marshmallows and microwave them to melt, as if you were making crispy cereal bars. Now you must knead the sugar into the melted marshmallows. Its easiest if you have a heavy duty stand mixer with a dough hook, but it can be done by hand as well. Do not use all the sugar unless you have to. The proper consistency will be about like PlayDoh. If you want to color the entire batch with one color, you can add some paste/gel food color in as you knead. You can also add vanilla or almond extracts or any other flavor you choose during the kneading process. After you have it well kneaded, you will want to wrap it tightly and let it rest for 15-30 minutes.

While working with the marshmallow fondant, have a bit of Crisco or some spray oil handy to keep the work surface, rolling pin, and your hands lightly greased. This will help keep the fondant from sticking and also helps the surface of the fondant maintain a glossy shine. If you find your fondant is still too sticky, knead in a bit more sugar.

Pina Colada Cake Recipe

Ingredients:

Cake –

* 2 boxes of white cake mix
* egg whites (according to mix instructions)
* pineapple juice to replace the water in the cake mix
* 2 teaspoons coconut extract
* 1 teaspoon rum extract

Icing –

* 3 8 ounce blocks of cream cheese
* 4 cups confectioner’s sugar
* 1 1/2 cups cream of coconut, plus a little for drizzling
* 2 teaspoons coconut extract
* 1 small tub of whipped cream

Garnish –

* 1 bag of shredded coconut, toasted
* 1 cup of macadamia nuts
* 1 whole coconut
* toothpicks
* 1 cup dehydrated banana chips

Directions:

1. Mix together both boxes of cake mix according to package instructions, using only the egg whites. Replace the amount of water with pineapple juice, and add in coconut and rum extracts. Real rum can be used instead of the extract, but instead of adding it into the cake, drizzle some over the cake layers (amount to personal preference) once they have cooled.
2. Bake all the mix in only three 9” round cake pans. When these cakes have baked and cooled, the center will be sunken in, creating a little “bowl” in the middle that will be filled a smooth, creamy cream cheese filling. Allow the cakes to cool completely before proceeding with layers.
3. While the layers are cooling, go ahead and mix the cheesecake filling. Blend together three blocks of softened cream cheese, two cups of sifted confectioner’s sugar, one cup of cream of coconut, and two teaspoons of coconut extract. Set this in the refrigerator and allow it to cool to the consistency of thick pudding.
4. When the cake layers have cooled and the filling has thickened, begin layering the cakes. Place the first layer “bowl” side up and fill with about 1/3 of the filling. Drizzle cream of coconut over the cheesecake filling, but avoid putting too much or letting any run down the sides of the cake.
5. Add the second layer, fill with cheesecake, and drizzle with more cream of coconut. Then put on the top layer. Place the cake in the refrigerator while mixing the icing. To the remaining filling, add ½ cup cream of coconut and two cups of confectioner’s sugar. Then carefully fold in one small tub of whipped cream. Set this in the refrigerator while preparing garnishes.
6. Spread two cups of coconut flakes out onto a baking sheet. Bake at 350 degrees F, stirring frequently, until the coconut flakes are a beautiful, toasty brown. Remove from the oven and allow it to cool. Break the coconut in half and remove the coconut in chunks. Break the coconut into different sizes to make the garnish more interesting. Roast these pieces of coconut in the oven at 350 degrees F until they begin to brown just a bit. Remove them from the oven, place them in a bowl, and toss them in two tablespoons of cream of coconut and two teaspoons of the toasted coconut.
7. Remove the cake and frosting from the refrigerator and ice the cake. Pipe dollops of the icing in a decorative design on top of the cake. Press toasted coconut into the icing all over the sides of the cake, then pipe icing around the bottom edge of the cake. Drizzle cream of coconut all over the top and sides of the cake. Put toothpicks into some of the chunks of coconut and stick into the sides of the cake. Garnish the top of the cake with the remaining coconut chunks, macadamia nuts, banana chips, and top it all off with another sprinkle of toasted coconut.
8. Extravagant and worth every single bit of trouble! Keep this cake in the refrigerator. It is best served after sitting over night. Enjoy!

I have never really decorated a cake like this before....but I am willing to try...how hard can it be?! The only question I have is how to make the flowers! I have finally put up my black frames that I got for Christmas. I LOVE how they turned out. We moved into our home in August so putting pictures up feels a little funny. I think we have gotten accustomed to blank wall spaces...ha ha...here are the two walls..I also painted the trim around my front door. Originally I had just the door black and the trim white but I think this really completes the look. What do you think?

Project nursery # 7 kissing balls

I love, LOVE how this turned out! My daughters room is like my little sanctuary now. I love adding little pieces here and there to make her room beautiful. So this these kissing balls are actually tissue paper flowers! I used this idea here and instead of using pipe cleaners I just used silk pins, just pinning the flower right onto the Styrofoam ball. It was really easy and it didn't really take that much time at all. I started to do this project but I didn't have the patience for it. I really enjoyed this project! And I think the results speak for itself!!

I painted my daughters name on an old cabinet door front that I bought at Ikea for 99 cents! It was really fun for me. I started by painting the board the same color as the wall. Then, I took some white paint and just started painting designs. I really like how it turned out. My favorite thing about it is that you can't see my mistakes!! Then I just painted the letters on using this technique. I'm not cool enough to own a cricket so I needed some way to paint without it looking so much like it was hand painted! What do you think?

marshmallow fondant

Check out this amazing recipe! I have to say that I LOVE the decorated cookies site! She has some really great things!

2 cups mini marshmallows
2 tablespoons water
2 teaspoons vanilla extract
1 pound confectioner's sugar
Crisco or vegetable shortening

Grease a microwave safe bowl with Crisco. Pour 1 cup marshmallows in bowl. Pour 1 tablespoon water and 1 teaspoon extract over marshmallows. Heat in microwave until marshmallows puff a bit, about 20 to 30 seconds. Stir well until fully melted and smooth and runny. Put confectioner's sugar in the bowl of a standing mixer with the flat beater (I greased the beater with Crisco. I'm sure a handheld electric mixer will work, too). Pour marshmallow mixture into the sugar and blend on low speed. Clean marshmallow bowl and repeat with another cup of marshmallows, 1 tablespoon water, and 1 teaspoon extract, melted and stirred. Pour into sugar and continue blending until dough forms. Knead briefly on a surface dusted with confectioner's sugar. Wrap in plastic and let sit about half an hour. NOTE: I did the marshmallows in two batches because I thought one batch would be enough, but the dough was too dry. Next time I make this, I'll try melting the marshmallows all at once.

Strawberry Lemonade Bars
Crust
1/4 cup sugar
1/2 cup butter, room temperature
1 1/2 cups all purpose flour
1/4 tsp salt

Filling
1 cup fresh lemon juice
2-3 tsp lemon zest
1/2 cup pureed strawberries (about 3/4 cup berries)
1 1/4 cups sugar
4 large eggs
1/4 cup all purpose flour
1/2 tsp baking powder
1/4 tsp salt

Preheat oven to 350F. Lightly grease a 9×13-inch baking pan (or use the Baker’s Edge pan, if you have one).
Begin by making the crust.
In a large bowl, cream together sugar and butter, until smooth and fluffy. Working at a low speed, gradually beat in flour and salt until mixture is crumbly. Pour into prepared pan and press into an even layer. Bake for about 17 minutes, until set at the edges.
While the crust bakes, prepare the filling.
In the bowl of a food processor, combine lemon juice, lemon zest, strawberry puree, sugar and eggs and process until smooth. Add in flour, baking powder and salt, then pulse until smooth.
Gently pour the filling over the hot crust when it has finished baking. Return pan to oven and bake for 23-26 minutes, until the filling is set (There will be a light colored “crust” on top from the sugar in the custard - nothing to worry about).
Cool completely before slicing and use a damp knife to ensure clean slices.
Store bars in the refrigerator, especially on a hot day.
Makes 24 bars.

This was really a simple project! All I did was take an old frame, paint it white and glue some scrapbook paper to the backing. I had a left over piece of wood that I just painted purple and I painted the letter "R" onto. I felt like it needed something else so I glued my extra Christmas beads around the wood piece, and I love the result! I hung it over my daughters crib!

KEY LIME CUPCAKES

1 cup all purpose flour
3/4 cup self-rising flour
1/2 cup (1 stick) unsalted butter, room temperature
1 1/4 cup sugar
2 large eggs
2 1/2 tablespoons fresh lime juice
1 tablespoon finely grated lime peel
1/4 teaspoon neon-green food coloring
3/4 cup buttermilk

FROSTING
1 8-ounce package cream cheese, room temperature
1 1/2 cups powdered sugar
1/2 cup (1 stick) unsalted butter, room temperature
1 tablespoon finely grated lime peel
1/2 teaspoon vanilla extract

Preparation

CUPCAKES

Preheat oven to 350°F. Line standard muffin pan with 12 paper liners. Whisk both flours in medium bowl. Beat butter in large bowl until smooth. Add sugar; beat to blend. Beat in eggs 1 at a time, then next 3 ingredients (batter may look curdled). Beat in flour mixture in 3 additions alternately with buttermilk in 2 additions. Spoon scant 1/3 cup batter into each liner.
Bake cupcakes until tester inserted into center comes out clean, 20 to 25 minutes. Cool 10 minutes. Remove from pan; cool.

FROSTING
Beat all ingredients in medium bowl until smooth. Spread or pipe onto cupcakes.

Just add water Pancake mix

I have always bought just add water pancake mix but I have decided that it would probably cost less if I made it myself. Thats when I came across this lovely recipe! Everything I all ready have! Hope you all enjoy it!

8 cups flour
1.5 cups dry milk (the powdered stuff)
3/4 cup sugar
2 teaspoons salt
2 tablespoons baking powder

Combine all ingrediants and store in an airtight container. To make a batch of pancakes, stir together 1 cup of the dry mix with 1/2 cup water and cook as usual. Nuts, dried fruits, etc can be added as desired.

Bagels

I can't wait to try this! I have been on a kick where I want to make everything from scratch! We'll see how this recipe turns out! Click here for the link!

Ingredients:

2 tablespoons of yeast.
3 tablespoons of sugar.
1 tablespoon of salt.
4 ¼ cups of bread flour.
1 ½ cups of water, 110 degrees.

Water, for boiling.

1 gallon of water.
1 tablespoon of sugar.
Preparation Instructions:

Place the dough ingredients in your bread machine as directed in the manufacturer's instructions.

Set the bread machine on dough cycle.

When your machine signals, remove dough to well floured surface and cut into 8 equal pieces and shape to form donut shapes.

Cover and allow to rest for about 20 minutes.

In a large kettle, bring about the gallon of water with the sugar to simmer.

Preheat your oven to 475°F (240°C).

After the bagels have rested, put them in your oven for 5 minutes, turning once after 3 minutes.

Remove the bagels, then reduce oven temperature to 350°F (175°C).

Place 3 bagels in simmering water for total of 5 minutes, turning after three minutes.

Remove the 3 bagels from water.

Drain on paper towels while simmering remaining bagels.

Place simmered bagels on a greased baking sheet.

Bake at 350°F (175°C) for about 25 minutes or until brown.

eggless sugar cookies

I found this recipe for an eggless sugar cookie....I have a little boy in my class that is allergic to eggs...so hopefully he will enjoy this cookie!

No egg sugar cookie:
1 lb. butter
2 c. sugar
3 c. flour
1 tsp. baking soda
1 tsp. salt

Cream together butter and sugar. Sift dry ingredients together and mix into creamed mixture. Roll into small balls and place on an ungreased cookie sheet. Press slightly with a fork dipped in sugar. Bake at 350 degrees for 8 to 10 minutes until lightly browned. Found here at cooks.com

SWEET AND SPICY CASHEW CHICKEN

A delicious and colorful Chinese dish. Serve over rice on a large platter.

SAUCE:

□ 1/2 c. ketchup
□ 4 tsp. soya sauce
□ 1/2 tsp. salt
□ 2 tbsp. Worcestershire sauce
□ 3 tbsp. sugar
□ 1/4 tsp. cayenne pepper
□ 1/2 c. chicken broth

THE REST:

□ 2 tbsp. cornstarch
□ 1/2 tsp. sugar
□ 1/4 tsp. salt
□ 3 whole boneless chicken breasts, skinned & cut into 1/2 inch slices
□ 1/4 c. oil
□ 2 to 3 tbsp. minced fresh ginger root
□ 1 tbsp. minced garlic
□ 1 sm. onion, chopped
□ 2 red bell peppers, cut into 1 inch triangles
□ 2 carrots, sliced diagonally & thinly
□ 2 c. snow peas
□ 1 1/2 c. cashews

Combine sauce ingredients and set aside. In a bowl, combine cornstarch, sugar and salt. Add chicken and toss. Heat wok or frying pan to highest heat. Add oil. Heat to hot, not smoking. Add chicken, ginger, garlic and onion. Stir until chicken is opaque. Add peppers and carrots. Stir 2 to 3 minutes. Add peas and sauce. Cook until it comes to a boil. Add cashews and serve immediately. Serves 6.

Recently I have been on a blue kick. I love the feel, its so calming and relaxing. On of my favorite places is the beach. I am not one of those people that want to incorporate beach design into my home, however, I really want to bring in the tones and feel of the beach around my home. What I want to do is split it in half, so that the kids can have their own bathroom accessed from the hallway & we can have our very own master suite. The two bathrooms would be pretty small after being split, but I don't mind! Here's some bathroom eye candy!

The twirling tooth fairy

This is such a great idea. My daughter is only 8 months old, so this idea won't be used any time soon. But, I just had to store this idea in my blog so that I would have it when my little girl will loose her first tooth!! CUTE!

How does she? talking about her friend Natalie.....

"Before Bed, Natalie’s little girl sets out a big glass of water with her tooth at the bottom. While she is sleeping the Tooth Fairy comes to get her tooth and colors the water whatever color her princess dress happens to be that particular night. First it was hot pink, then purple, and when she came the other night, it was red with red sparkles! She must have been dancing in her room because there was red glitter all over her floor and bed! After the dance she always leaves new toothpaste, sugarless gum, and of course some money under the pillow."

daybed makeover-project nursery #3

This was a really easy project as well. First off we were so blessed to receive this daybed for free! It was a creme and gold so I painted it white with rustoleum spray paint-white. We bought the bed set at bed, bath and beyond last summer during their sidewalk sale for about $40! What a great deal! I made the two decorative pillows andI plan on making more....I will keep you all posted! My next project involves my daughters dresser. It will probably take me a couple of days....I'll post it when I'm done!

Project Nursery #2

This is my daughters closet doors in her nursery. This is a really easy way to add color and fun to my daughters room. I love her closet doors now! Before they were just bland! SOrry I didn't take any pictures as I was doing it...but all I did was tape off a rectangle where I wanted to paint. Then I took a bowl about the size I wanted to round the corners and evenly placed it so both edges matched...(Sorry if I'm not making much sense!) and just traced the bowl. Then the fun part! Paint! I found some small gems at walmart. They were $2 per pack. Each pack had 110 pieces and I needed 5 packs. I just hot glued the gems on...and I think it brought it to life!! I love it!!

Soft Pretzels

These pretzels were delicious!! I am not the best cook but these were a cinch! I found the recipe at Annie's eats here. These pretzels were really soft, and I really had a fun time making them! You should all try it!! YUM!

Soft Pretzels
Ingredients:
For the dough:
1½ cups warm water (110-115° F)
1 tbsp. sugar
2 tsp. kosher salt
2¼ tsp. instant yeast
22 oz. all-purpose flour (about 4½ cups)
4 tbsp. unsalted butter, melted
Vegetable oil, for greasing the bowl

For finishing:
Cooking spray
10 cups water
2/3 cup baking soda
1 egg yolk beaten with 1 tbsp. water
Pretzel (or kosher) salt

Directions:
To make the dough, combine the water, sugar, salt and yeast in the bowl of a stand mixer fitted with the paddle attachment. Mix on low speed to dissolve the yeast. Add in the flour and mix just until the dough comes together. Switch to the dough hook and knead on medium speed until the dough is smooth and clears the sides of the bowl, about 5 minutes. Transfer the dough to a bowl lightly greased with vegetable oil, turning once to coat. Cover with plastic wrap and let rise in a warm place, about 50-55 minutes or until doubled in bulk.

Preheat the oven to 450° F. Line two baking sheets with parchment paper and spray lightly with cooking spray. Bring the water and baking soda to a boil in a large saucepan or stockpot. In the meantime, divide the dough into 8 equal pieces. Working with one piece at a time, roll a segment out into a 24-inch long rope. Make a U-shape with the rope and holding the ends of the rope, cross them over each other and onto the bottom of the U-shape in order to form the shape of a pretzel. Place onto the parchment lined baking sheet. Repeat with the remaining pieces of dough.

Place the pretzels into the boiling water, 1 or 2 at a time, for 30 seconds. Remove from the water with a slotted skimmer and return to the baking sheet. Once all the pretzels have been boiled, brush the tops with the egg wash and sprinkle lightly with salt. Bake in the preheated oven until dark golden brown, about 12-14 minutes. Transfer to a cooling rack for at least 5 minutes before serving.

I love this scrapbook idea. I have actually seen one as an engagement scrapbook. It's a really cute idea. This particular idea was for a 'end of the year' school scrapbook. It has all the kids drawings and little saying for the class that year.
